This beautiful Sunday morning, I want to spoil my special someone with my adorable homemade pancakes. It’s a nice, easy and quick choice for an impressive breakfast to start the day. Several may have the impression that pancakes are a foreign habit that was last adopted in Greek cuisine. The commonly known tiganites, have deep roots in ancient Greece. The ancient Greeks made them with wheat flour, olive oil, honey and milk for breakfast. just between us, who has no memories of mum’s homemade pancakes with honey and cinnamon? I found an oatmeal pancake recipe in one of my favorite cooking magazine collection, recently. And it is so delicious that i find worth sharing with you. But above all, I believe you have to give a try! These are the most flavorful pancakes I have ever tasted, not because I made them but the secret is hidden in the nutmeg. Its strong, characteristic rich aroma in combination with the cinnamon, just make the difference.


1/2 cup rolled oats

1 cup all-purpose flavor

1 tablespoon brown sugar

pinch of salt

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 1/4 cup milk

1 tablespoon butter or olive oil

+additional oil for pan


Put the rolled oats in a blender and process to a smooth mixture. In a large bowl combine mixed oats, flour, sugar, salt, baking powder and spices. Mix well.

Then in separate bowl combine milk, egg, melted butter and blend. Add liquid ingredients to dry ingredients and stir until it become a moistened porridge. If it gets lighter put flour and if it gets very tight put milk.

Heat a non-stick pan over a medium heat and spray with a tbsp oil. Pour about 1/2 cup of batter into the pan. Cook pancakes for 2 mins until the base sets and bubbles appear all over the top. Flip and cook the other side for 1-2 mins. If they fit, put into the pan 2-3 doses of butter and cook them together in a tbsp oil for each dose. Repeat in patches and serve.

Pancakes toppings

I served two plates of pancakes, by two delicious ways. I garnished the first one with honey, walnuts and bananas. A plate that conjure suit memories and emotions. As concerns the second one, as a chocolate lover, was topped with praline and strawberries. Who can resist on such a breakfast!!!
